Sunday- Dinner party- Scallops w Pineapple Salsa / Salad / Asparagus
Monday- Creamy Mushroom Parmesan Chicken
Tuesday- Shepard’s Pie (with mashed cauliflower instead of potatoes!)
Wednesday- Shepard’s Pie leftovers
Thursday- Duck Confit (again…lol, I promise we dont eat it this much, Nick had a work dinner here & wanted me to make it again (its one of his favs of mine he likes to “show off” 😉
Friday/Sat/Sunday- My first meal from One Potato! One Potato sent me a box of three meals to cook this week for our family and I am so excited to try them- One Potato is ALL organic and geared towards the family- adult & child portions and the recipe cards include tips on how to get the kids cooking and helping with that particular recipe. I am excited to check it out and will be sharing on instagram.
