Cinco de Mayo is around the corner and so I chose a margarita for this month’s cocktail! Cinco de Mayo is a celebration of the defeat of the French army at Puebla and had a ripple effect on democracy in America. (a mini history lesson before we dive in to these pineapple margaritas 😉
I asked on Instagram stories what kind of margarita you would like to celebrate Cinco de Mayo and the choices were pineapple and cucumber. Pineapple won the vote! Cucumber did have a decent amount of votes, so I am thinking a cucumber cocktail will be coming your way soon!

Ok let’s get cocktail shaking- history lesson and instagram distracting me as usual!
2 parts pineapple juice (I use fresh pineapple blended and then pour thru a sieve)
1 part freshly squeezed lime juice
1 part tequila
Garnish with mint
And the best thing ever to rim your margarita glasses- lime zest and Trader Joe’s lime salt
I also added the lime salt to fresh pieces of pineapple for a snack- holy moly it was SO good.
Pineapple is very sweet, so I chose not to add an orange element or any sweetener to the margarita.
